Jaime Damak’s Spiced Chicken and Medleys

Ingredients

  • 2 chicken thighs per person
  • ¼ tsp. herbamare
  • ½ tsp paprika
  • ½ tsp onion powder
  • ½ tsp pepper
  • 1 minced garlic clove
  • 1 chopped onion
  • ½ cup chicken broth
  • A drizzle avocado or olive oil

How to make it

  1. Blot the chicken with a paper towel.
  2. Mix all the spices together in a small bowl.
  3. Heat up a frying pan and add a drizzle of oil.
  4. Spoon the spice mix over the pieces of chicken and use the back of the spoon to spread the spice and make it stick onto the meat.
  5. Add the onion to the pan and sauté for a minute.
  6. Add the chicken, spice side down, into the pan. Let it cook for 6–7 minutes.
  7. Then turn the chicken over. Let it cook for another minute.
  8. Add the chicken broth, garlic, and cover.
  9. Let it simmer for another 7 minutes or until the chicken is fully cooked.

For the McCain Medleys

  1. Preheat the oven to 425°F.
  2. Spread the vegetable medley on a baking pan.
  3. Bake the medley while the chicken is cooking.
