Ingredients

  • 1 pack McCain® Medleys Smoky Paprika & Pepper
  • 2 tsp vinegar (optional for poaching eggs)
  • 2 chorizo or Italian sausages, casings removed, crumbled
  • 4-8 eggs  
  • Flat leaf parsley, minced
  • Salt and pepper, to taste  
     

Paprika Aioli  

  • ¼ cup plain Greek yogurt  
  • 2 tbsp mayonnaise  
  • 1 clove garlic, minced  
  • 1 tsp lemon juice  
  • ½ tsp paprika (smoked or sweet)  
  • ¼ tsp salt  

How to make it

  1. If poaching eggs; bring a large pot of water with 2 teaspoons of vinegar to a boil to poach the eggs.
  2. Place the McCain® Medleys Smoky Paprika & Pepper and the crumbled sausage into an air fryer basket. Air fry at 360°F for 12-14 minutes (or in the oven at 425°F for 16-18 minutes), tossing halfway through.  
  3. While the veggies and sausage cook, make the Paprika Aioli. In a small bowl, whisk together the Greek yogurt, mayonnaise, garlic, lemon juice, paprika, and salt.  
  4. Poach or fry the eggs to your liking.  
  5. To serve, place a portion of the veggie and sausage mixture into shallow dishes or plates, top with the eggs, season with salt and pepper, and garnish with the parsley. Serve with a drizzle of the Paprika Aioli and enjoy.
