Proscuitto Wrapped Wedges with Pesto
Savory wedges and bocconcini cheese wrapped in prosciutto, & served with a basil pesto. We're taking entertaining to the next level!

For the Basil Pesto:

2 cups fresh basil leaves
2 cloves garlic
1/2 cup pecorino cheese
1/4 cup toasted pine nuts
1/2 cup extra virgin olive oil
Salt and pepper
For the Wrapped Sea Salt Crinkle Cut Fries
Ingredients:
24 McCain Sea Salt Crinkle Cut Wedges
6 slices prosciutto, each cut into 4 strips
6 medium balls bocconcini cheese, each cut into 4 slices
1/4 cup fresh basil leaves
1 tbsp extra virgin olive oil
Fresh ground pepper
1/2 cup basil pesto

For the Basil Pesto:
Directions:
- Place basil, garlic, cheese and pine nuts in a food processor and pulse until finely chopped and even.
- While food processor is running, stream in olive oil until fully incorporated.
- Season with salt and pepper to taste.
For the Wrapped Sea Salt Crinkle Cut Fries
Directions:
- Cook McCain Sea Salt Crinkle Cut Wedges according to package directions
- Place one slice of bocconcini cheese on the centre of a wedge and wrap with one slice of prosciutto. Repeat with remaining wedges.
- Place wrapped wedges on a serving platter. Drizzle with olive oil. Garnish with basil leaves and fresh ground pepper.
Serve with basil pesto for dipping.
