Proscuitto Wrapped Wedges with Pesto

​Savory wedges and bocconcini cheese wrapped in prosciutto, & served with a basil pesto. We're taking entertaining to the next level!

Ingredients

​For the Basil Pesto:

Ingredients:

2 cups fresh basil leaves

2 cloves garlic

1/2 cup pecorino cheese

1/4 cup toasted pine nuts

1/2 cup extra virgin olive oil

Salt and pepper

 

For the Wrapped Sea Salt Crinkle Cut Fries

Ingredients:

24 McCain Sea Salt Crinkle Cut Wedges

6 slices prosciutto, each cut into 4 strips

6 medium balls bocconcini cheese, each cut into 4 slices

1/4 cup fresh basil leaves

1 tbsp extra virgin olive oil

Fresh ground pepper

1/2 cup basil pesto

Directions

​For the Basil Pesto:

Directions:

  1. Place basil, garlic, cheese and pine nuts in a food processor and pulse until finely chopped and even.
  2. While food processor is running, stream in olive oil until fully incorporated.
  3. Season with salt and pepper to taste.


 

For the Wrapped Sea Salt Crinkle Cut Fries

Directions:

  1. Cook McCain Sea Salt Crinkle Cut Wedges according to package directions
  2. Place one slice of bocconcini cheese on the centre of a wedge and wrap with one slice of prosciutto. Repeat with remaining wedges.
  3. Place wrapped wedges on a serving platter. Drizzle with olive oil. Garnish with basil leaves and fresh ground pepper.

 

Serve with basil pesto for dipping.
