McCain® Potato Pancakes® with Caramelized Onion and Tomato Jam
Crispy Potato Pancakes® are topped with caramelized onions and melty brie cheese to create the perfect two-bite appetizer.

Ingredients
McCain® Potato Pancakes®
1 package McCain® Potato Pancakes®
½ wheel brie cheese
Caramelized onions (recipe below)
Tomato jam (recipe below)
5 chives, finely chopped
Tomato Jam (recipe below)
3 ½ Cups of ripe plum tomatoes, finely chopped (can use a food processor)
1 Cup of sugar
2 Tbsp of apple cider vinegar
1 Tbsp of garlic, finely chopped
1 Tsp of ground cumin
½ Tsp of ground cinnamon
½ Tsp of ground black pepper
pinch of ground cloves
1 Tsp of salt
Caramelized Onions (recipe below)
6 white onions, sliced
3 Tbsp of unsalted butter
1 Tbsp of olive oil
salt to taste
1 Tsp of sugar, balsamic vinegar, or water (optional)
Directions
McCain® Potato Pancakes®
Preparation Time: 15 minutes
Cooking Time: 30 minutes
Serves: 10-12 appetizers
- Cook McCain® Potato Pancakes® according to package directions.
- Let cool for 5 minutes.
- Top with a piece of brie, a dollop of tomato jam and caramelized onion.
- Sprinkle with fresh chives.
- Serve warm.
Tomato Jam
Preparation Time: 15 minutes
Cooking Time: 1 hour 40 minutes
Serves: 475ml
- In a heavy bottomed saucepan, over medium heat combine all ingredients.
- Bring to a boil, reduce to a simmer, stirring occasionally until mixture has a consistency of thick jam, about 1 hour 40 minutes.
- Taste and adjust seasoning.
- Pour into hot, sterilized jars, screw the lids on and turn the jars upside down to cool. Or allow mixture to cool completely and transfer into an air tight container and store in the fridge for up to 10 days.
Caramelized Onions
Preparation Time: 15 minutes
Cooking Time: 40- 60 minutes
Serves: 500ml
- Heat a large pan on medium high, add butter and oil.
- Add the onion slices and stir to coat the onions with oil. Spread the onions out evenly over the entire pan, cook, stirring occasionally.
- (Depending on your stovetop burner, you may need to reduce the heat to medium/ medium low to prevent the onions from burning or drying out)
- Season and cook for 45 minutes to and hour, stirring every few minutes. Continue to cook and scrape until the onions are rich and caramelized.
- At the end of the process you could add a little wine, balsamic or water to deglaze the pan and bring additional flavour to the onions.
- Store in the fridge or freeze.
