Spanish Patatas Bravas Homefries & Eggs
This delicious and satisfying baked egg dish is loaded with smoky chorizo sausage and McCain® Breakfast Homefries in a thick tomato sauce – it’s perfect for breakfast, dinner or even a gourmet midnight snack!
1 bag (650 g) McCain® Breakfast Homefries
1 tbsp (15 mL) olive oil
1 onion, finely chopped
2 cloves garlic, minced
1/2 cup (125 mL) chopped cured chorizo sausage
1 can (15 oz/425 mL) diced tomatoes
1 tbsp (15 mL) sherry or red wine vinegar
1 tsp (5 mL) smoked paprika
1/2 tsp (2 mL) each salt and freshly ground pepper
1/4 cup (60 mL) mayonnaise
4 fried eggs
1 tbsp (15 mL) finely chopped parsley
- Prepare McCain® Breakfast Homefries according to package directions.
- Meanwhile, in large skillet, heat oil over medium heat; cook onion, half of the garlic, and chorizo for 5 minutes or until onion is softened. Drain any fat from skillet.
- Add tomatoes, sherry, smoked paprika, salt and pepper to skillet; bring to boil. Reduce heat and simmer for 20 minutes or until thickened.
- Stir mayonnaise with remaining garlic; set aside.
Toss Breakfast Homefries with tomato sauce and divide evenly among four plates. Top with fried egg and a dollop of garlic mayonnaise; sprinkle parsley over top.
