Oven Roast Beef With Hollandaise Superfries®
This family-friendly oven roast beef dinner made with hollandaise sauce and steamed asparagus is easy to prepare, and equally delicious! Your family is sure to ask for seconds!
3 lb (1.5 kg) beef eye of round roast
2 tbsp canola oil
1 tsp each salt and pepper
1 bag (650 g) McCain® Superfries® Straight Cut
1 lb asparagus, trimmed and steamed
3/4 cup salted butter
4 egg yolks
2 tbsp lemon juice
1 tsp Dijon mustard
Salt and pepper
Pinch of paprika (optional)
- Preheat oven to 450˚F (230˚C). Rub roast with oil and season all over with salt and pepper; transfer to baking sheet. Roast for 50 to 60 minutes or until meat thermometer registers 130°F (55°C) for rare, or 145°F (63°C) for medium-rare. Tent with foil; let rest for 10 minutes.
- Meanwhile, prepare McCain® Superfries® Straight Cut according to package directions.
- Hollandaise Sauce: In small saucepan, heat butter over medium-high heat until melted and bubbling. Meanwhile, in blender, purée egg yolks, lemon juice and mustard until smooth; with motor running, pour the bubbling butter into blender. Season with salt and pepper to taste. Garnish with paprika (if using). Serve immediately.
- Slice roast and serve with McCain® Superfries® Straight Cut, steamed asparagus and Hollandaise Sauce.
Tip: Add 1 tbsp (15 mL) chopped fresh herbs such as chives, parsley or tarragon to Hollandaise Sauce if desired.
