Cooking Time:

Ingredients
1 bag (650 g) McCain® Superfries® Straight Cut
1/4 tsp garlic powder
1/4 tsp ground cumin
2 tbsp butter
1 small onion, finely chopped
2 cloves garlic, minced
1 tbsp minced fresh gingerroot
2 tsp red curry powder
2 tsp garam masala
1/4 tsp each salt and pepper
2 tbsp tomato paste
1 can (14 oz/398 mL) diced tomatoes
1/3 cup 35% whipping cream
2 tbsp chopped fresh cilantro
Directions
- Bake McCain® Superfries® Straight Cut according to package directions. Stir garlic powder with cumin; toss with McCain® Superfries® Straight Cut to coat.
- Meanwhile, in skillet, melt butter over medium heat; cook onion, garlic and ginger, stirring occasionally, for about 5 minutes or until onion is slightly softened. Add red curry powder, garam masala, salt and pepper; cook for 1 or 2 minutes or until fragrant. Add tomato paste; cook for 1 minute. Add tomatoes and cream; bring to boil. Reduce heat to low; simmer for 15 to 18 minutes or until thickened.
- Serve McCain® Superfries® Straight Cut with curry sauce and garnish with cilantro.
Tip: Serve with a dollop of tzatziki sauce or yogurt if desired.
If you cannot find red curry powder, substitute 2 tsp (10 mL) curry powder, 1 tsp (5 mL) paprika and pinch of cayenne pepper.
Substitute fresh parsley or mint for cilantro if desired.
