Lemon Pepper Wedges with Chicken Souvlaki
Here’s a dish that’s perfect for sharing on the patio, McCain® Savory Wedges dusted with lemon pepper for a zesty kick and a garden fresh Greek salad served with grilled chicken souvlaki skewers.

Ingredients
For the Greek Salad
Ingredients:
4 medium-sized tomatoes, cut into wedges
1 large cucumber, sliced
1 small red onion, peeled and thinly sliced
1 cup kalamata olives
3 tbsp olive oil
2 tbsp red wine vinegar
1 tsp dried oregano
1/2 cup crumbled feta cheese
For the Chicken
Ingredients
1 (650g) bag McCain® Savoury Wedges
2 chicken breast, cut into 1 1/2 inch pieces
4 garlic cloves, minced
1/4 olive oil
2 tbsp lemon juice
1 tsp sweet paprika
1 tsp dried oregano
salt and pepper
1 tbsp lemon pepper
Directions
For the Greek Salad
- Mix tomatoes, cucumber, onion, olives in a bowl. Toss with oil and vinegar.
- Season with salt and pepper.
- Garnish salad with oregano and feta cheese.
For the Chicken
- In a large bowl mix garlic, oil, lemon juice, paprika, and oregano. Toss chicken pieces in mixture and let marinate for 1 hour.
- Thread chicken onto skewers. If using wooden skewers, soak in water for 30 minutes. Discard remaining marinade.
- Heat a grill to medium-high. Place skewers on grill and cook until charred and cooked through, about 8 minutes, rotating every 2 minutes.
- Meanwhile, cook McCain® Savoury Wedges according to package directions.
- Remove from oven and immediately sprinkle wedges with lemon pepper.
Serve McCain® Savoury Wedges with lemon pepper with freshly grilled chicken skewers, Greek salad and tzatziki sauce.
