Ingredients

  • 1 pack McCain® Medleys Mexican Style
  • 1 handful of cherry tomatoes (optional)
  • 4 tbsp olive oil
  • 2 cloves of garlic, smashed
  • 1 jalapeno pepper, chopped (optional)
  • 8 pieces of shrimp, deveined
  • 1 cup tomato sauce
  • Pinch of chipotle seasoning
  • Pinch of salt
  • 2 tbsp crumbled feta cheese
  • Small bunch of cilantro, chopped

How to make it

  1. Cook McCain® Medleys Mexican Style in the Air Fryer for 16 minutes at 360°F. Optional, add 1 handful of cherry tomatoes on top before frying.
  2. While the Medleys is cooking, add 4 tbsp of olive to a frying pan and cook 2 smashed cloves of garlic on medium heat for 2 minutes until the garlic is golden brown. Optional, add in chopped jalapenos while the garlic is cooking.
  3. Add 8 pieces of deveined shrimp and cook until golden brown on both sides.
  4. Add 1 cup of tomato sauce to the pan and cook on medium heat for 2 minutes.
  5. Add a pinch of chipotle seasoning and a pinch of salt.
  6. Pour the shrimp and tomato sauce mixture on top of the cooked McCain® Medleys Mexican Style and finish with 2 tbsp of crumbled feta cheese and chopped cilantro.
