Sweet Salmon & Red Skin Potatoes Recipe

​​​​​​​​​​​​​​​​​​​​​​​​Just got home from the gym and wondering what to make? Cook up this light, healthy, omega-3 dish in no time. Add a little variety to the everyday with McCain® Homestyle Red Skin Chunks and delight everyone at the dinner table.

Ingredients

Ingredients for the salmon

  • 1 bag (750g) McCain® Homestyle Red Skin Chunks
  • 2 tsps honey
  • 4 tsps Dijon mustard
  • 3 tbsp white-wine vinegar
  • 1/2 cup olive oil
  • Salt and pepper to taste
  • 1 cup Panko breadcrumbs
  • 1 pound boneless, skinless salmon fillet, cut into 4 pieces

 

Ingredients for the sautéed zucchini and cherry tomatoes

  • 1 tbsp olive oil
  • 1 small red onion
  • 2-3 zucchinis halved and cut into 2 inch cubes
  • 1 pint of cherry or grape tomatoes, halved
  • 2 cloves of garlic
  • Salt and pepper to taste

Directions

  1. Prepare McCain® Homestyle Red Skin Chunks according to package directions.
  2. Preheat oven to 450°F.
  3. In a small bowl whisk together honey, mustard, vinegar, and oil; season with salt and pepper.
  4. Take 1 cup of Panko breadcrumbs and mix 2-3 tbsp. of the glaze mix and set aside.
  5. Generously brush the top of the salmon with the glaze and season with salt and pepper; top with breadcrumb mixture and add to sheet.
  6. Bake until fish is cooked through, about 7 minutes then broil the top of the salmon for 1-2 minutes to brown.
  7. In a medium-heat sauté pan, heat olive oil and then add red onions and cook, stirring frequently, until very soft, 7-8 minutes.
  8. Add zucchini, tomatoes and garlic and cook for 3-5 minutes or until zucchini is cooked but still crisp.
  9. Assemble and serve. Tip: Use some of the remaining vinaigrette to drizzle over the dish or save for a rainy day.
