Pan Fried Cod With Superfries® Recipe

​​​​​​​​​​​​​​​​​This Modifry™ is fresh from the sea! Imagine lightly salted pan fried cod with a delicious potato crust, topped with a delightful butter cream sauce. Chef Taylor Snyder at Crush Wine Bar in Toronto has certainly given fish and chips a whole new meaning.

Ingredients

Crust (4 portions):

3 tbsp butter

2 tbsp canola oil

2 cups chopped defrosted McCain® Superfries® Straight Cut

2 shallots sliced lengthwise

3 sprigs of thyme, picked

Pinch of salt

 

4 pieces of cod or fish of choice or pork
1 bag (650g) McCain® Superfries® Straight Cut

 

Butter Sauce:

1 ½ oz wine OR table cream

¼ of a lemon

¼ cup of butter, cubed

Directions

1. Pre-heat oven to 450°F and start preparing the crust. 

2. Once oven is pre-heated, bake McCain® Superfries® Straight Cut according to package directions.

 

Crust:

  1. Heat pan on medium heat, add butter, canola oil and shallots, and cook for 10 – 15 minutes until the shallots are golden.
  2. Add chopped McCain® Superfries® Straight Cut and cook for another 5 minutes over the same heat.
  3. To finish, add the picked thyme and salt. 

 

Fish:

  1. Lightly oil the piece of fish and sprinkle with salt.
  2. Heat an oven-safe pan over high heat.  Once hot, add the fish to the pan. You'll hear a hard sizzle immediately.
  3. Continue cooking the fish on high heat until you see golden edges around the piece of fish.
  4. Flip the fish over in the pan, top seared side with crust, and cook in oven (heated to 450°F) until topping is golden and fish is cooked through (6 – 10 minutes depending on thickness of fish). 


Finale:

  1. After you remove the fish from the pan, place the pan on medium heat and add an ounce and a half of white wine OR table cream. You'll hear another hard sizzle.
  2. Squeeze lemon juice into pan until it is almost reduced. Add butter, a cube at a time, placing pan on and off the heat to keep it at a warm temperature.
  3. Place a portion of fries on a plate, top with Potato Crusted Cod, and drizzle Butter Sauce atop. Enjoy!
