Breakfast Burrito with Homefries

​​​This delicious burrito is loaded with scrambled eggs, ham and home fries for a complete weekend brekkie or a quick breakfast to go.

Ingredients

2 cups (500 mL) McCain® Homefries

6 eggs

¼ tsp (1 mL) each salt and pepper

3 tbsp (45 mL) butter

1 small onion, chopped

⅔ cup (150 mL) chopped ham

2 tbsp (30 mL) chopped parsley

4 large tortillas, warmed

½ cup (125 mL) shredded cheddar cheese

Directions

  1. Prepare McCain® Homefries according to package directions. Whisk eggs with 1 tbsp (15 mL) water, salt and pepper; set aside.
  2. In large non-stick skillet, melt 1 tbsp (15 mL) of the butter over medium-high heat; sauté onion and ham for 3 to 5 minutes or until onion is tender and ham is heated through. Toss with McCain® Homefries and parsley.
  3. In same skillet, melt remaining butter over medium-low heat; cook egg mixture, stirring, for 3 to 5 minutes or until soft curds start to form.
  4. Arrange tortillas on clean work surface; top evenly with McCain® Homefries mixture, scrambled eggs and cheese. Fold up bottom of tortillas over filling, then fold in sides and roll up tightly.

 

Tip: Substitute Cheddar for your favourite– try Swiss, Havarti or Monterey Jack.
